XP Pro vs Windows Server 2003r2

I have tried the search function several times and have not been able to find any comparisons on these two OS's. Here's a little background.

I am engineering and installing a 18 IP camera network. We are suppling and installing everything except the switch and the buildings' engineers are doing that. The server is going to be a SC1435 Dell with Dual Xeon 2.8Ghz processors, two 300GB hard drives and dual NIC's - one for the video and the other for the buildings main net.

I am familiar with Win XP Pro but not with Server 2003. Which operating system would better serve this hardware configuration?

Well I have done an installation with Server 2003 and XP Pro. Usually I use XP Pro because it is getting put into an existing network which already has a Windows server running. The one time they didn't have a server running, we did end up using Server 2003. We found some issues with the OS and the software running. It looks like it was issues with the OS and not the software. We ended up replacing the OS with XP Pro and it has worked fine since.

My opinion is XP Pro, it is cheaper that Server 2003 and runs better for recording from IP cameras.
